The plot , the character development and how most anime are abruptly ended really influences an anime's "fascination factor" e.g Death note , I really enjoyed the anime however the ending was where the producers should have tried to get creative since the manga ending was not really meant to be an ending. I won't spoil the manga plot however the point i'm trying to emphasize is proper completion. With that in mind I will list my three most memorable anime experiences.

Here and there, now and then.
Possibly one of the most overlooked underdog anime. This anime manages to do in twelve episodes what other anime do in fifty. Most of all everything about here and there, now and then is brilliant. Here and there, now and then really delivers , funny and powerful.

Kara no kyoukai aka Garden of sinners.
Gorey , serious and slightly philosophical. Take a moment to google the correct order to watch this since the chronological order isn't the correct order to watch it if you haven't already seen it. 9 Episodes , no I should say 9 movies.

Mushishi and Mushishi Zoku Shou.
Every episode was memorable. Amazing to watch, the visuals and the soundtrack combined with the storytelling make this one of the most awesome anime i've seen. Top 3 easily.

+1 on that. I read the DN manga first and watched the anime's ending, definitely felt like they were scraped for time or something and just went "let's wrap this up quick".

Kara no Kyoukai is pretty underrated too. It does have it's flaws here and there but I didn't feel like it was enough to not get a mention every now and then. I personally think it had more to do with it being more dialogue heavy and reliant on plot devices than what most people would generally prefer. Anyway, there's always Fate/Zero if you want something that isn't as much of an acquired taste as KnK.

I think S2 is a long way off.
And similar to NGNL umm If what you liked was how blank was owning everyone then "One outs", " Death note", "Lelouch". If you liked the whole stuck in a game experience then "Sword art online" and "Log Horizon".

Who hasn't watched sword art online yet but in my opinion NGNL is way better, I've heard of log horizon going to try it out :D

^I haven't watched SAO II yet but I agree, first arc of SAO was great, I loved it. Hated that the second arc was so meh in comparison.

I agree they should have gotten creative with the end. Its even worse when they end an anime like deathnote that suddenly.

Naruto/Shippuden: Only anime that made me stuck to it that long and I watched over 500 Episodes
Prison School: One of the funniest anime I've ever seen

    Started Dead Island 2, and i find it pretty lame. The story is shit. The characters are either cringe or bland (all 6 of them), The gameplay isn't fun. Even the goddamn zombies don't behave like proper zombies. They're all fast & intelligent unlike how zombies are supposed to be like. Any fan of "zombie" genre cannot possibly like this shitfest of a game. Dying Light 2 was million times better than this shit.
