HDMI 2.0 or Display port 1.2
(GPU hav HDMI 2.1 & DP1.4 but monitor has HDMI 2.0 or Display port 1.2 limitations)
AOA, that's an excellent question, short answer: always prefer DP over HDMI if both devices have a DP because within the same generation, DP has always had more bandwidth than HDMI.
Long answer: well we can calculate data rate at the monitor's max resolution and see how much bandwidth we need to have in the medium.

Which should work on a DisplayPort 1.2 port with at least an HBR2 rated cable. Now, at max resolution of 2560x1440 @ 165 Hz you can only use HDR with 8-bit RGB uncompressed or lower (compressed formats YCbCr).
